In honor of Taco Tuesday and the fact that it's officially summer, I'm breaking out my crockpot to share a simple summer recipe that I love: Slow Cooker Chicken Tacos! I love this recipe for so many reasons--it requires hardly any ingredients, it's cheap, it doesn't require an oven in this summer heat, and it's incredibly versatile; I love using leftovers on tortilla chips for quick and easy nachos, baking or frying the "tacos" to make taquitos, or just including it alongside regular taco meat in a yummy taco bar! There are so many options and you can dress it up with any taco toppings you like!
